Pasta Fagioli Recipe


  • 3 carrots
  • 3 celery sticks
  • 1 medium yellow onion
  • 3 cloves garlic, minced
  • 1 1/2 teaspoon oregano and thyme
  • 2 bay leaf
  • 1 lb ground beef or pork
  • 1 900ml chicken broth
  • 5-6 diced tomatoes
  • 1 can kidney beans
  • 1/2 teasoon salt
  • 1/4 teaspoon pepper

cook together oil, onion, carrot, celery, salt & pepper 6 minutes. Add garlic,, oregano, thyme & bay leaf, cook 2 minutes. Move to edge of pot. Add beef to centre of pot, cook until browned (3 minutes). Add tomato paste, broth tomatoes, 1 cup water. Increase heat from medium to boiland add pasta. Cook 12-15 minutes and add beans.
